上位８bit下位8bitを入れ替える理由を知りたい

実現したいこと

温度センサから読み取ったデータ16bitの　上位８bit下位8bitを入れ替える理由を知りたいです。

前提

16bit温度センサー（ADT7410）からI２C通信でraspberry pi 4 bに値を読み込む

Temperature Value Registers

When reading from these registers, the eight MSBs (Bit 7 to Bit 15) are read first from Register Address 0x00 and then the eight LSBs (Bit 0 to Bit 7) are read from Register Address 0x01.

製品に付属している日本語版の使用書より　英語版のほうが詳しいようですね

温度センサーのデータがビッグエンディアンでWindowsがリトルエンディアンだからです。

「raspberry pi 4 bに値を読み込む」とあるのでWindowsは関係ないでしょう。
raspberry pi に使われているCPUがリトルエンディアンなんでしょうね。
