Statusカラムが追加された後に、unDoneボタンを押して追加しようとしたがundoneが追加されないという理解でよろしいですか？もしそれであれば、追加しようとしたときに出たログがあると嬉しいです。
もしくは既存のデータにStatuカラムの追加かつ、unDoneというデータが入ることを期待しているが、unDoneが入ってないということについてのご質問ではないですか。質問の内容について確認したいと思いました。
前提・実現したいこと
railsでtodoアプリを作っています。
未完了ボタン(押すと完了、再び押すと未完了に表示が変わる)を実装中で、
statusカラムを用いて、デフォルトに'undone'を入れ、ボタンが押されたら、'done'に変えるという形で実装使用としているのですが、データベースにデフォルト値が入りません。

後者です。既存のデータにStatuカラムの追加かつ、unDoneというデータが入ることを期待しているが、unDoneが入ってない状態でなぜ入らないのかが分からないです。

デフォルト値を指定したカラムの追加を行っても、既存のデータにはStatusカラムが追加はされますが、default値は自動では入りません。
カラム追加後のデータには入ります。
既存のデータにDefault値を入れたい場合は、例えばRails Consoleとかで
Todo.update_all(status: 'unDone')
など手動で手を加えるのが良いかもしれません。

'undone'を既存のデータにいれることができました
ですが、新しいtodoタスクを作った時にも自動で'undone'を入れたいのですが、できますでしょうか？
可能です。ちなみに現在はどうなりますか？
statusカラムに何も入ってない状態で新しいタスクが作られています
ログを拝見したいです。
Nullを入れない場合は、, null: falseを設定してしまうのが適切かと思います。
また確認ですが
Todo.create(content: 'hoge', limit: '2020-02-26')
とすると、Statusは作られますでしょうか？
ログを上記に載せました。

nilが入るのですね。
よく見るとschema.rbにdefaultが書かれていませんね。
正しくは以下のようにdefaultが設定されている必要があります。

ただ見る限り、20200226100616_add_status_to_todos.rbの記述は正しそうです。
もし既存のデータが削除されても問題なければ
bundle exec rails db:migrate:resetなどためしていただけますか？
またmigrate:resetをするならば、Add Migrateのファイルを削除して、初期のCreateTableのMigarateファイルで以下のようにデフォルト値を設定するのも一つの手です。

bundle exec rails db:migrate:resetで無事解決しました！！
